Here is a quick and delicious recipe for the spicy Aztec dish we all know as guacamole. You can vary the spice level of your guac by adding more or fewer jalapeño peppers. This flavorful vegan dip can be paired with any number of chips, quesadillas, crackers, and salads. This is an especially great dish for fellow students because all the ingredients together cost around $4.
Choosing the right avocado is an especially important step. To pick a ripe one, gently squeeze the whole fruit in your palms. A ripe avocado will be slightly soft but not bruised on the inside.
- 2 ripe avocados
- 1/2 cup fresh, finely chopped cilantro
- 1 jalapeño
- 1 small tomato
- 1/2 lime
- salt and pepper to taste
Cut the avocado in half and remove the pit. Scoop the meat out with a spoon and put it in a medium bowl. Add the finely chopped cilantro and squeeze the juice of the half lime into the bowl. Remove the seeds and stem and dice the jalapeño, along with the small tomato. Add the rest of the ingredients to the bowl and just mash with a fork until it is the consistency you like. Some recipes call for a blender or a food processor, but I think chunkier guacamole has more flavor.
